If you're still looking for a killer Super Bowl party food to make, here's a super-easy, sophisticated dessert, courtesy of the Official Father of Rufus on Fire.
Individually Sized Cheesecakes

Ingredients:
1 eight-ounce package of cream cheese
1/4 cup sugar
1 large egg
1 teaspoon vanilla extract
12 butter pecan cookies (often sold as "sandies")
1 can fruit pie filling, or any other kind of cheesecake topping you think would be good
Foil cupcake liners
Directions:
1 -- Take the cream cheese out of the fridge, set it aside, and let it thaw while you do the next step. Pre-heat the oven to 350 degrees.
2 -- Trim the cookies to fit the base of each foil cupcake liner. A table knife and a cutting board should do. Place the cookies in the liners and place the liners in a cupcake pan.
3 -- Put the cream cheese in a small bowl and blend with electric mixer on slow speed till it's softened, about 15 seconds.
4 -- Add the sugar, egg and vanilla, and continue to beat at low speed until the ingredients just come together, about a minute. Don't over-beat.
5 -- Scoop the cheesecake mixture into the cupcake liners. Distribute evenly among the 24 -- if you fill a bunch to the top, there may not be enough for all 24 and there won't be room for the topping.
6 -- Bake for 15-18 minutes, or until the individual cakes turn shiny on top. Apply the topping and let cool. If refrigerating, cover with plastic wrap first. Serve at room temperature.
